The great ‘Operation Hospital Food with James Martin’ is back. This time however they are also supporting the programme with the recipes. Hurrah!
In 2023, I was inundated with requests for his Apple and Cauliflower soup recipe. Frankly, I was surprised that this particular dish seemed to stir up so much interest? For my part I valiantly tried to get his PR team to publish it somewhere. Thankfully it won’t be a problem this year.
Coincidentally my favourite from today is the same famous cauliflower and apple soup. Probably because most people would have tried these ingredients before and this is always a good place to start.
To make it even healthier (in my view) the only substitution I would make is possibly Rice Dream or Soya milk for the dairy. Also maybe a bit more olive oil instead of butter for the cholesterol-aware?
For the vegetable stock, I always use Marigold’s powdered bouillon. Although it might seem expensive I have found in the long run it is cheaper than stock cubes. It is also available in reduced salt and organic variety, if you really want to push the boat out.
The food (more specifically meat) disasters in the media recently, appears to be having the impact of generating interest in home cooking again. Maybe people are finally realising that it is not necessarily time consuming or expensive. Let’s face it; it is for the most part safer, especially if you are starting with ingredients that you recognise i.e. that are nature made.
So it’s fantastic that this time round the BBC have supplied the recipes that are featured on the programme. Clearly it has been recognised that the public really want to cook his food for themselves.
I like James Martin’s recipes as they are essentially healthy and simple. A perfect combination to not only get people cooking but get them interested in doing more. If you don’t get a chance to watch the programme, then do look at the BBC website for his recipes.
I’ll be following the programme and coming up with ideas to make his great food even healthier. You never know, he might even give me the thumbs up!
