Baked salmon is so easy to cook; the only concern you have is – be careful not to overdo it. The whole process from prep to serving takes around 15 minutes.
When meals are this quick to prepare it encourages healthy eating. Serve with a heap of lightly steamed veg or salad made with a variety of ingredients and you have a great tasting and nutritious meal.
I’ve used ready made pesto plus capers in olive oil. All in all, this dish will give you lots of gorgeous essential fatty acids, great protein and amazing flavour!

Cook time: About 10 minutes
Preheat the oven to 220 C/ 400 F Ingredients
Serves 4
- 4 Salmon fillets
- ½ jar of Basil Pesto (a jar is normally around 180 – 200 gms)
- 1 small jar capers in olive oil, chopped
- Handful of baby tomatoes, halved
Method
- Pre heat the oven to 220 C/ 400 F
- Wash and dry the fillets and lay them skin side at the bottom in a shallow oven dish.
- Scatter tomatoes around the tray
- Drain the capers into a bowl and reserve
- Chop the capers and add to the oil
- Stir in the pesto
- Coat each fillet generously with the mixture.
- Drizzle a little remaining oil over the tomatoes.
- Bake until the fish is just cooked. This should be no more than around 10 minutes depending upon the thickness of the fillets.
- Keep checking after around 7 minutes to make sure it breaks into individual flakes when prodded with a fork.
- Serve with steamed veg of your choices and roasted sweet potatoes.
